I would find it hard to believe that anyone has not closed their eyes in pure delight when biting into a macaron! Pretty heavenly!  ALIX is always trying to discover fun ways of bringing members and friends together. We have been fortunate to meet a great pastry artist and teacher who will guide us through the hands-on,  step-by-step process in creating the most heavenly macarons.

It will be a fun filled evening where a small group will work under the direction of Simon Herfray. We have visited his efficient commercial kitchen where our workshop will take place. When there I asked why there were no stools around the work table, he laughed and shared that  the class is very active with participants working constantly during the 2 ½ hour class. No down-time!

We will make, bake, eat and then take home our handmade box-full of macarons to share with family and friends. After five years of training and experience, Simon graduated with a Masters Degree in Pastry and Bakery. Simon worked in France and London and New York in some of each city’s best dining establishments.  January 2014, Chef Simon launched French'Encas (translation in English: “a small snack”), a culinary company focused on catering and teaching the fine art of French cooking through classes and workshops. He is excited to share his talents and expertise in French pastry and dessert making with the New York City community. Join the fun as you learn a new art!
